Chicken Dijon Stew

This is such a easy autumn dinner idea and it tastes amazing on a chilly day! In this version I just used potatoes and onions as the veggies but you could also add sweet potatoes or use a combination of parsnips, broccoli and carrots.

Ingredients
  • 1 whole White onion ( )
  • 3 whole chicken ( ) Breasts
  • 6  Small Red potatoes ( )
  • 1 teaspoon garlic ( ) Salt
  • 3 cups Hot Water
  • 1 Tablespoon thyme ( )
  • 1 cup Sour Cream
  • 3 Tablespoons Dijon Mustard
  • 2 Tablespoons Whole Wheat Flour
Directions
  1. Throw the onions, chicken, potatoes, salt and water into a crockpot. Turn on high and let cook for 1 hour.
  2. Remove the chicken breasts, let cool 10 minutes and shred the chicken. Return the chicken to the crockpot and add the thyme. Allow to simmer on low for 1-2 hours.
  3. Mix together the sour cream, mustard and whole wheat flour. Mix into the crockpot. Turn off the crockpot and let the flavors mix for 20 minutes before serving.
