Loaded Chicken Satay French Fries

Think of a classic Canadian Poutine, but now skip the cheese and instead add a spicy peanut sauce and chicken satay over the top of homemade fries. These are addicting.

Ingredients
  • FOR THE SATAY SAUCE:
  • 1 can coconut ( ) Milk (13 Ounce Can)
  • ¾ cups Creamy peanut ( ) Butter
  • ¾ cups Water
  • ¾ cups Granulated Sugar
  • 3 Tablespoons Red Curry Paste
  • 1 Tablespoon apple ( ) Cider Vinegar
  • FOR THE FRENCH FRIES:
  • 2 whole Russet potatoes ( ), Cut Into 1/4 Inch Match Sticks
  • 3 cups Canola Oil
  • 2 pinches Salt To Taste
  • 2 pinches Cracked black pepper ( )
  • ½ cups Cooked chicken ( ), Chopped
  • 2 Tablespoons Fresh Cilantro, Chopped
Directions
  1. Start by making the sauce. You can do this ahead of time. Add the satay sauce ingredients into a saucepan, and simmer, stirring along the way. Once everything is combined and has thickened and formed your preferred consistency for sauce, take it off of the burner and set it aside. Let it cool and store in a covered container in the refrigerator.
  2. Add the cut fries into a large bowl of cold water, and keep them in there for about 20 minutes. This helps remove a bit of the starch from the potato.
  3. Drain the potatoes and pat them dry them on a large towel, getting them ready for the oil. During this time, add the oil into a medium-sized pot and bring that up to about 300 F.
  4. In small batches, add the fries into the hot oil and cook them only for about 5 minutes. Remove them from the oil with a slotted spoon, and set them aside on some paper towel. Repeat with remaining potatoes.
  5. Now that the potatoes are par-cooked and drained, bring the oil temperature up to 350 F. Once the 350 F temperature has been reached, add the pre-cooked potatoes in small batches, back into the oil. Cook for another 5-7 minutes, or until they are golden brown and crispy on the exterior. Again, remove with a slotted spoon, and set on some more paper towels to drain. Repeat with the remaining fries.
  6. Add the cooked fries into a mixing bowl and generously season with salt and pepper.
  7. Back away from the fries! Do not eat them until they are ready for the remaining ingredients!
  8. Warm up the satay sauce. Add the fries to a serving dish. Spoon the sauce all over the french fries. Shower with the cooked chicken and cilantro. Spoon over a bit more sauce, then get ready to dig in.
  9. Now you have a couple of options. Dig in with a fork, or dig in with your fingers. Me? Fingers all the way.
  10. The result was everything I expected from that awesome satay sauce. And then you get blasted with the awesome texture of the french fries. A crispy exterior with a tender interior, that when combined with the sauce, well, I will say no more. These loaded chicken satay french fries were awesome!
