Roasted Maple and Honey Carrots

Roasted carrots with a sweet and savory glaze.

Ingredients
  • 6 whole carrots ( )
  • 4 Tablespoons Extra Virgin olive ( ) Oil
  • 1 teaspoon garlic ( ) Salt
  • ½ teaspoons nutmeg ( )
  • 4 Tablespoons Raw honey ( )
  • 2 Tablespoons Pure Maple Syrup
Directions
  1. 1. Preheat oven to 425ºF. Cut the carrot tops off but leave an inch or so ( I like doing this for display).2. In a large bowl, combine oil, garlic salt and nutmeg together. Toss carrots in the mixture to coat all of the carrots.3. Place into the oven for 20-30 minutes, or until carrots are tender, not mushy. Make glaze by combining honey and maple syrup; set aside.4. As soon as carrots are finished cooking, place then into a large bowl and coat with the glaze. Place on a serving tray and drizzle the remaining glaze.
  2. Note: Do not place the glaze onto the carrots while they are cooking, the glaze will burn in the oven.
