Vegetable Salad

Easy (make-ahead) recipe for getting more vegetables into you and your family’s day!

Ingredients
  • 2  Zucchini Squash
  • 2  Yellow Squash
  • 2  Scallion
  • 2  tomato ( )
  • ½ cups Fresh basil ( ) Leaves, Or More To Taste
  • Salt And Pepper, to taste
  • 2 Tablespoons olive ( ) Oil
Directions
  1. Slice and dice vegetables, then toss them into a large mixing bowl. Take two large hands full of fresh basil, chop and place into the bowl with the vegetables.
  2. Sprinkle with salt and pepper. Then drizzle on 2 tablespoons of olive oil. Gently mix.
  3. Wrap the top of the bowl with plastic wrap and chill in the refrigerator.
  4. When ready to serve:Scoop two spoonfuls onto the top of a green salad and add your favorite dressing. An easy way to have prepared vegetables throughout the busy weeknight.
  5. Stays fresh for about 4 to 5 days, so eat up!
